Glayva Scotch Whisky Liqueur (500ml) Volume: 500ml ABV: 35% Age: No Age Statement Country: Scotland In 1947 Ronald Morrison, a local wine and whisky merchant, wanted to create a liqueur that would warm and comfort his loyal customers, particularly during the cold Scottish winters. Based at a busy port in Leith (Edinburgh, Scotland), Morrison had access to exotic ingredients from far off lands, such as tangerines, honey and spices, which, when mixed with the Scotch malt whisky, created a surprisingly distinctive and pleasant flavour. The name Glayva was taken from the reaction of the warehouseman, Hector, who was the first to taste the liqueur after Morrison. “Gle Mhath”, he proclaimed, translated from Gaelic as “Very Good”. Since then, the recipe has never changed, and many since Hector have agreed. The spirit is created from an exotic fusion of the finest aged Scotch malt whiskies, a carefully selected range of spices, Mediterranean tangerines, cinnamon and honey. Because of all these different ingredients, Glayva has a very distinctive and pleasant taste. Surprisingly smooth and sweet, with a hint of cinnamon and spices, it really tastes like nothing else!

Johnnie Walker Aged 15 Years Green Label Blended Malt Scotch Whisky (700ml) Volume: 700ml ABV: 43% Age: 15 Years Country: Scotland The brand Johnnie Walker was first created in 1820 by John Walker, a green grocer from Kilmarnock in Scotland. The Excise Act was introduced in 1823 relaxing strict laws on distillation and reduced the heavy taxes on distillation and the sale of whisky. John Walker sold blended malt and grain whiskies from his grocery store and as he did not have a brand of his own started to use his own name on the labels selling the blended malt as ‘Walker’s Kilmarnock Whisky. In 1860 the brand’s signature logo was introduced by Alexander Walker, a square bottle. This meant more bottles could fit into the same space and the bottles were less likely to break. The label was also introduced where it was applied at an angle of 24 degrees upwards left to right and allowed text to be made larger and more visible. In 1893 the Cardhu Distillery was purchased and this meant a steady run of Johnnie Walker could be produced with thoughts and plans for expansion. The Walker brand purchased Coleburn Distillery, Clynelish Distillery, Dailuaine Distillery and Talisker Distillery. In 1923 Mortlach Distillery was purchased and shaped the Walker strategy. Johnnie Walker Green Label is a blend of single malts Talkisker for it’s smoke and spiciness, Linkwood for its freshness and vibrance, Cragganmore for fragrance and maltiness and Caol Ila for its big, maritime character which has been aged for 15 years. Our Tasting Notes Nose: Wood smoke, coffee and chocolate. Palate: Continued coffee-chocolate with cereal grains and a slight sweetness. Finish: Lasting finish of oak and spice.

Corowa & Thomson Distilleries ANZAC Whisky Virtual Tasting Event When: Thursday 29th April 2021 Time: 8PM AEST Where: Zoom Video Conference To show our support in remembering the Australian and New Zealand troops served in military operations we are proud to be holding a virtual tasting which will bring two young distilleries together. All profits will be donated to the ANZAC Appeal at our local Seaford RSL. Corowa was a vibrant New South Wales town in the 1800’s due to its close proximity to the Murray River. As always man found greater need to transport items quicker and so road transport became more popular and the town lost its vibe. The local flour mill which sits in the towns centre lay dormant for many years, that is till Corowa Distilling Co. decided to purchase it from the local council for $1. Dean Druce, the owner of Corowa Distilling Co. owned the Junee Liquorice and Chocolate Factory in Wagga Wagga, which was also based in a restored flour mill. This mill in Corowa experienced a major overhaul and after spending years on renovations turned this Corowa site into something magical. Every heard of Willy Wonkas Chocolate Factory? Well, now add whisky to the equation and take away the kids! The Thomson Whisky Distillery is located in Riverhead, North West of Auckland. Founded in 2014 is started the same way you would start a band. The team got together and just started tinkering. It was never about taking over the world, or playing Wembley, but about giving it a go, creating the best spirit they could afford to and sharing their journey with anyone who liked whisky. They wanted to give New Zealanders a whisky they could be proud of, with a sharp brand on top. Their bottling’s reflect who they are, because they’re small enough to do it how they like it. As they grow these qualities remain. After a few years mucking about on a home still and learning as much as they could about whisky (mainly by thorough investigation of the flavour) they began the Thomson Whisky project as Independent Bottlers. They got hold of a few barrels of aged single malt from Willowbank Distillery, Dunedin, carefully selected to our personal tastes, to launch under the Thomson name. They figured if it didn’t sell they’d drink it themselves. They didn’t get that lucky. Two barrels, a unique bottle, a business card, and Thomson Whisky came to life. They started telling people about their whisky, and sharing a drink with friends, then bartenders, and shops and people traveling overseas…and the project started firing. Both distilleries are about the same age and they are both entering a world of single malt whisky in unique way. In this tasting they’ll each take us through three of their whiskies whilst providing history, tasting notes and production methods. Focusing on the new make spirits and complimenting the spirit with maturation in the best locally sourced barrels. Oloroso Sherry Montilla Fortified Wine – North Star (700ml) Volume: 700ml ABV: 17% Age: N/A Country: Spain North Star Spirits is an independent bottler based in Glasgow, Scotland. They pride themselves on bottling the finest single malt Scotch whisky, blended whisky and blended malt Scotch whisky. Producing artisan single cask whisky from various regions of Scotland as well as bottling rums, gins and Bourbon whiskey. All products are small batch, bottled at cask strength. A wonderful creation by the team at North Star. This bottle contains Oloroso Sherry drawn from refill Hogshead casks that previously held whisky. A bit of a backwards way to think about this process but the result is outstanding especially if you have a sweet tooth. sherry casks used in whisky production are seasoned with sherry rather than used in sherry’s own production – the fresh wood imparts too much flavour for sherry – and once this seasoning is finished, the fortified wine has picked up enough oaky influence that it is no longer suitable for bottling as sherry. It may then be processed into sherry-vinegar. Made in Spain and bottled in Scotland. Only 370 bottles created at 17% ABV. Our Tasting Notes Nose: Dark dried fruits, leather, tobacco leaves, walnuts. Taste: Toasted walnuts, dark stone fruits, caramel and brown sugar. Finish: Medium to long, clean and drying.
Tin Shed Distilling Piotr Australian Malt Vodka – Cossack Strength (500ml) Volume: 500ml ABV: 37.5% Age: No Age Statement Country: Australia The Tin Shed Distillery in Adelaide, South Australia is a place where determination, dedication and an unshakeable belief is starting to pay off. The distillery is all about passion and a spiritual journey. Every step of the process is performed by hand from milling the malt, stirring the mash, making the cut and moving the barrels, to judging which casks to use, bottling, labelling and shipping bottles. The distillery was established in 2013 and has mainly been releasing single cask whisky to this point. Most of the releases are sold out in very short time and become either historic and memorable drams with friends or sit pride of place on a whisky cabinet. The distillery produces three brands of spirit. Iniquity….the whisky, Requiem….the rum and Piotr….the vodka. Piotr’s Vodka is made from a mixture of traditional Cossack wheat spirit married with the Tin Shed’s own barley malt spirit that would otherwise be destined to become whisky.

The name ‘Signatory’ was derived from the initial intention to find a person of suitable standing to sign the labels for bottles drawn from a single cask. The first cask bottled was a 1968 Glenlivet which quickly sold through long before any suitable signee could be found. Signatory currently bottle at three strengths: 43%, 46% Unchillfiltered (UCF) and Cask Strength. To add proof of authenticity to their cask strength bottlings, Signatory always include the cask numbers, date of distillation, date of bottling and number of bottles produced. Limeburners Winter Solstice Boilermaker Pack The Winter Solstice marks the longest night and the shortest day of the year. As most are keenly aware, daylight hours grow shorter and shorter as the winter solstice approaches, and begin to slowly lengthen afterward. Every year in Australia the winter solstice occurs on June 21st. The seeming death of the light and very real threat of starvation over the winter months would have weighed heavily on early societies, who held varied solstice celebrations and rites meant to herald the return of the sun and hope for new life. Scandinavian and Germanic pagans lit fires and may have burned Yule logs as a symbolic means of welcoming back the light. The modern Druidic celebration Alban Arthan reveres the death of the Old Sun and birth of the New Sun. Solstice derives from the Latin scientific term solstitium, containing sol, which means “sun,” and the past participle stem of sistere, meaning “to make stand.” This comes from the fact that the sun’s position in the sky relative to the horizon at noon, which increases and decreases throughout the year, appears to pause in the days surrounding the solstice. In modern times, we view the phenomenon of the solstice from the position of space, and of the Earth relative to the sun. Earlier people, however, were thinking about the sun’s trajectory, how long it stayed in the sky and what sort of light it cast. Cameron Syme of the Limeburners Distillery in Albany Western Australia owns and runs one of Australia’s oldest and most established distilleries. He has created a whisky from peat collected by hand from the deepest darkest parts of the Valley of the Giants. The barley was smoked for an extended period, resulting in a heavier, more intense style of whisky ideally suited for cold winter nights and shorter darker days. This whisky was matured in an ex-bourbon American Oak cask and has been matured to perfection. The whisky exhibits spice and floral aromas when neat and a splash of water unleashes malted barley and intense complex smokey aromas. Bottled at 63.5% abv with no colouring or chill filtration. We have paired this whisky with a smooth robust ale from Wolf Of The Willows named Johnny Smoke Porter. Dark brown to light black in colour, the senses are met with aromas of espresso, dark chocolate and campfire smoke. Rauch (smoked), Munich, chocolate, brown and black malts provide a firm malt profile that is smoky yet balanced by malt sweetness on the palate. The inclusion of East Kent Goldings and Willamette hops provides an earthy but gentle bitterness. With a smooth, moderate body and medium carbonation, this new take on the classic robust porter finishes with layers of chocolate, espresso and hints of smoke. When offered together you are able to experience the ultimate boilermaker combination to make your winter solstice a night to remember. Grab a pack today and receive a free Spey whisky glass. 2018 Trofeo Estate ‘The Chosen Few’ Chardonnay Mornington Peninsula Wine (750ml) Volume: 750ml Style: Chardonnay Cork: Cork ABV: 13% Vintage: 2018 Country: Australia, Mornington Peninsula About the Winery The land on which the winery and the vineyard sits was owned by Passiflora Plantations Company in the 1930’s. It was set up to become Australia’s leading exporter of passionfruit and products associated. They planted over 70,000 passionfruit and then sadly the plantation was destroyed by disease. It was then purchased by the Seppelt family in the 1940’s and it was turned into a vineyard. Wine judge and retailer Doug Seabrook then maintained the vineyard till 1967 when the area was devastated by bushfires and the vines were destroyed. In 1998 the vineyard was given another lease of life and passed through many owners but sadly it fell into neglect. That was until latest owner Jim Manolios developed the property as a cafe restaurant, vineyard and winery. And what a fine job he’s done. The vineyard boasts pinot noir, chardonnay, shiraz, pinot gris and cabernet sauvignon grapes which sit on 18.5 hectares. Trofeo Estate is the exclusive Australian distributor of terracotta amphorae made in Italy, hence the involvement of amphorae in the making of a number of the wines. The process of terracotta ageing does not impart any flavour influence on the wine, resulting in wines that are elegant and soft, reflecting the natural flavours and aromas of the grapes. Terracotta amphorae winemaking techniques are known to produce delicious wines full of pure fruit expression and varietal character. Terracotta is an inorganic medium that does not harbor spoilage micro-organisms, reducing the levels of sulphur required to preserve the wine. Terracotta ‘breathes’ allowing oxygen into the winemaking process, this assists in developing palate and mouthfeel, whilst amplifying aromatics and flavours. About The Wine A top tier Chardonnay, a blend of the most unique Terracotta Amphorae with up to 9 years cellaring potential. The Chosen Few Chardonnay has been aged exclusively in Florentine Terracotta Amphorae. Part of our top tier range, this Chardonnay is a blend of our most unique amphora. With aromas of kumquat, lemon sherbet and orange blossoms not cobbled by oak, this Chardonnay is soft on the palate displaying cinnamon and nutmeg undertones. This elegant Chardonnay exhibits a smoothness, finesse and minerality that belies its young age. Enjoy today or cellar for even greater reward.

2017 Trofeo Estate Amphora Chosen Few Pinot Noir Mornington Peninsula Wine (750ml) Volume: 750ml Style: Pinot Noir Cork: Cork ABV: 13.7% Vintage: 2017 Country: Australia, Mornington Peninsula About the Winery The land on which the winery and the vineyard sits was owned by Passiflora Plantations Company in the 1930’s. It was set up to become Australia’s leading exporter of passionfruit and products associated. They planted over 70,000 passionfruits and then sadly the plantation was destroyed by disease. About The Wine A top tier Pinot Noir, a blend of the most unique Terracotta Amphorae that represent the best of their varietal. Grown on the Trofeo Estate in the cool climate, grey loam and clay soils of the Mornington Peninsula, this wine is sure to excite the senses. Ben Nevis 10 Years Old Highland Single Malt Scotch Whisky (50ml) Volume: 50ml ABV: 46% Age: 10 Years Old Country: Scotland This 10 year old single malt was introduced to the world back in 1996 and since starting out slow at first, has taken the world by storm. It has everything you could wish for in a single malt, everything. There’s a touch of peat, a mouthful of oak, a pinch of bourbon, a tickle of sherry and a smooth mouth watering feeling on the palate. Let’s not forget the sweetness is so well balanced and memorable. It is the Ben Nevis distilleries largest selling single malt whisky and in Jim Murray’s “Whisky Bible 2014” he explains “such a massive introduction to the palate: soft oils, citrus notes and very big oak on the malt, but sweet enough to chew forever; the integration of the oak really makes for some finish: long, hints of bitter roast coffee against the sweet oils; the nose makes you say oh-oh, but you need a knife, a fork, a spoon and napkin for the taste”. If you have never tried it you can not call yourself a whisky enthusiast, if you have you’re probably already checking out and anticipating its delivery. Our Tasting Notes Nose: Fresh with a rich fruitiness. A snifter of oak, a punch of toffee, fresh figs, sultanas softened, plum jam, orange marmalade, full of character. Taste: The slightly dry mouthfeel is outstanding, you start you start to chew. Creamy toffee mixes with fudge, you get pops of oak. There’s malted barley, christmas cake, subtle vanilla and little peaty notes, you continue to chew. Finish: This must not come to the end. Balanced spice, dark chocolate, caramel, the richness lingers and the memory remains. The finish is very very long but never long enough.

Laphroaig Aged 10 Years Islay Single Malt Whisky (50ml) Volume: 50ml ABV: 40% Age: 10 Years Old Country: Scotland Laphroaig is Gaelic for ‘the beautiful hollow by the broad bay’. Opened in 1815 this distillery has a wonderful history and produces exceptionally memorable whisky. Positioned in a bay sheltered by rocky islands the distillery has the warm seas of the Gulf Stream nearby to help in maturation process. The water comes from Kilbride Dam a natural water source on Islay. In making Laphroaig, malted barley is dried over a peat fire. The smoke from this peat, found only on Islay, gives Laphroaig its particularly rich flavour. American bourbon casks are used to mature this whisky and they produce a unique 10, 18 and 25 year old range of single malts. Interesting fact about Laphroaig is that during prohibition it was allowed to be imported into America because customer’s thought it had medicinal purposes. Laphroaig 10 is a smokey, full bodied whisky with strong peaty characteristics. Our Tasting Notes Nose: Heavy peat notes, smokey with a touch of spice and salt. Taste: Sea-spray, with sweet undertones leading to almost medicinal, oaky notes with a touch of spice Finish: Strong, lingering finish with medicinal notes and tar.

Score: 94.5 Comments:
”Fruity concoction of apples and pears topped with vanilla ice cream… one of the noses of the year.
Soft, indeed every bit as gentle as the label promises, as the light oils coat the palate with a fabulously intense and delicately sweetened barley skin.
A wonderful, multi-layered interplay between malt and oak-vanillas… hugely sophisticated.”

Glencairn Crystal ‘Wee Whisky Tasting’ Glass A small (wee) version of the original glass. One Glass with presentation box. Glass measures 9cm high (approx) 5cm wide (approx) *Please note this is the small version of the Glencairn Whisky Glass The Glencairn Whisky Glass is a revolutionary whisky glass that really lets one savor the taste and complexity of fine whisky. These are great to use for any of your Single Malt Whisky’s, Irish Whiskey’s, and also your single barrel bourbons. With the tapered mouth, you are able to really smell all of the nuances the whisky has to offer. Any malt advocate will love this glass! Champagne, Brandy, Wine… each has its own glass. Yet whisky, the worlds most complex spirit can be found served in anything from high ball tumblers to Paris goblets. It’s a bit like pouring your vintage champagne into a pint tumbler or your XO brandy into a shot glass! Whisky is a drink to be savoured. Time spent enjoying the flavours on the nose are equally important as those on the palate. Raymond Davidson decided it was about time someone designed a proper whisky glass… The perfect glass for whisky was created and left to mature for some twenty years at the bottom of a filing cabinet. After adequate maturation, his sons Paul and Scott decided to take his design to the people who know best… the master blenders! With their help and support they were able to take the glass around the world and promote it as the Glass for whisky, developed by the whisky industry for the whisky industry. Its roots lie in the traditional nosing glasses used by blenders around the world. The unique and stylish shape has been crafted with eminent care, to enhance the enjoyment of whisky. The tapering mouth allows an ease of drinking not associated with traditional nosing glasses whilst capturing the aromas on the nose. The wide bowl allows for the fullest appreciation of the whisky’s colour and the solid base is designed to be easy on the hand. They are also made from a crystal making them more durable than glass. Today the Glencairn Glass can be found at every distillery in Scotland, Ireland, Wales as well as most in the USA. It has won accolades from around the world including the Queens Award, the highest award for business in the UK. Importantly it is also beginning to appear in the places it was designed for… the bars! It may have taken a few hundred years to arrive, but whisky now has a glass of it’s own… FINALLY! In 2001 Glencairn Crystal solved the problem of identifying the ideal glass for whisky. Designed by Raymond Davidson nearly 25 years earlier, its development involved pulling together the master blenders from the five largest whisky companies and asking them to perfect his initial design. – Courtesy of Glencairn Crystal
